This has to be one of my all time favorite cookies. I think the reason I love it so much is because it is just not a typical cookie you can find anywhere. These are Oatmeal, white chocolate (semi-sweet chocolate chips also work very well) and dried strawberry cookies. It is a pretty simple recipe that uses only brown sugar for sweetness plus the white chocolate and strawberries. If you decide to make them, make sure you use DRIED strawberries, NOT freeze dried ones. There is a big difference.
Oatmeal, (white) chocolate chip and strawberry Cookies
3/4 cup all-purpose flour
1 cup regular oats
1/2 tsp baking soda
1/4 tsp of salt
3/4 cup packed brown sugar
1/4 cup butter, room temp
1 tsp vanilla
1 large egg
3/4 coarsely chopped strawberries
1/3 good quality white chocolate chips
Preheat oven to 350
In a medium bowl, mix flour, oats, baking soda and salt until combined.
In a large bowl with a hand mixer or in a standing mixer cream together the brown sugar and butter. Next add the vanilla and egg until thoroughly combined. Gradually add the flour mixture until fully incorporated.
With a wooden spoon, mix in the (white) chocolate chips and strawberries.
Drop about a tbsp of batter per cookie onto a silicone lined baking sheet (you should get 12 on one sheet) and place in the oven for 10-12 mins. Once done, remove and let cool on a wire rack.
